Tomatoes on Toast

Sometimes you just need a delicious yet quick lunch that's going to hit the spot and this couldn't be easier. I love popping to the market and when I do, I always stock up on fruit and veg and you can save yourself such a chunk of small change by swapping supermarket fruit and veg to market food and veg. These tomatoes are all from my local market stall and cost less than £3.00 for a big bag of toms to make a delicious recipe such as this tomatoes on toast one!

Tomatoes on Toast

Ingredients

  • 3 Large Vine Tomatoes

  • 10 Smaller vine tomatoes

  • 5 Plum tomatoes

  • 4 Slices of Jarlsberg

  • 2 tbsp Olive Oil

  • 1 tsp Cracked Black Pepper

  • 1/2 tsp Sea Salt

  • 9 Slices of Sourdough

  • Thyme Sprigs

  • Basil

Method

  1. Slice your tomatoes into thin slices and leave to the side. On your sourdough, drizzle the olive oil over it and grill until gently tanned and then turn over, drizzle the other size with remaining olive oil and then layer your jarlsberg and then your tomatoes, pepper, salt and thyme and grill for 2-3 minutes until toasted and your tomatoes are warm to touch. Finish with basil leaves.
