Cheese and Tomato Pizza Brioche Puffs

There is nothing better than cheese and tomato pizza. It’s simple, delicious and always a crowd pleaser so I am SO excited to show you how easy it is to make your very own cheese and tomato pizza puffs using nothing more than a few ingredients that you most likely have at home.

Okay, so what is in this pizza puff?

  • 8 Brioche Slices (you can use normal bread if you don’t have this)
  • Tomato Puree
  • Grated Cheddar and/or mozzarella
  • 1 Duck egg mixed with herbs and a dash of garlic for the egg wash

That’s it. As simple as simple can be and it’s SO easy to make.

How do you make it?

  • Each pizza puff uses two brioche slices. You want to line them one above the other and cut the top crust off of the bottom one and the bottom crust of the top one and gently line them together use a rolling pin to flatten out whilst joining them together
  • This will then give you 4 flat large brioche slices
  • Smother each one in tomato puree and then your grated cheese
  • Turn them so that the long part of the brioche flat bread is at the top and roll them as tightly as you can. Then cover them in your egg wash on both sides.
  • Roll them up into a bun shape and pop into a greased muffin tray and then cover the top with your egg wash once more.
  • Bake in the oven for 8 minutes
